Cajun Blackened Salmon

Blackened doesn't mean burned. You're looking for a deeply toasted spice crust while keeping the salmon juicy inside.

Ingredients

  • 4 salmon fillets
  • 2 tbsp melted butter
  • 1 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp cayenne pepper
  • ½ tsp black pepper
  • ¾ tsp salt
  • Lemon wedges

Method

    Combine paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt.

    Pat salmon dry, brush lightly with melted butter, and generously coat with the Cajun seasoning.

    Heat a cast-iron skillet over medium-high heat. Add olive oil.

    Place salmon in the hot skillet and cook without disturbing for approximately 3–4 minutes. Flip and cook another 3–4 minutes until the exterior is dark and crusted and the center is cooked to your preferred doneness.

    Serve immediately with fresh lemon.
