Garlic Butter Steak Bites

Garlic Butter Steak Bites

Dry steak, a hot skillet, and plenty of space are what give you that dark, flavorful crust.

Ingredients

  • 1½ lb sirloin steak, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 5 garlic cloves, minced
  • 1 tsp salt
  • ¾ tsp cracked black pepper
  • ½ tsp smoked paprika
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme
  • 2 tbsp chopped parsley

    Pat the steak cubes completely dry and season with salt, pepper, and paprika.

    Heat a large cast-iron skillet over medium-high to high heat until hot. Add the olive oil and 1 tablespoon butter.

    Add the steak in a single layer without crowding the skillet. Sear about 2 minutes without moving, then turn and cook another 1–2 minutes. Work in batches and transfer the browned steak to a plate.

    Reduce the heat to medium. Add the remaining butter, garlic, rosemary, and thyme and cook about 30 seconds until fragrant.

    Return the steak to the skillet and toss in the garlic-herb butter for another 30–60 seconds. Sprinkle with parsley and serve immediately.
