Homemade Beef Chili

Homemade Beef Chili

Bloom the spices in the pot before the liquid goes in. That one step is the difference between flat chili and deep, smoky chili.

Ingredients

  • 2 lb ground beef
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can pinto beans, drained
  • 1½ cups beef broth
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • ½ tsp cayenne (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce

    Brown the ground beef in a Dutch oven over medium-high heat for 7–8 minutes. Drain excess grease.

    Add the onions and peppers and cook 5 minutes. Add the garlic and tomato paste and cook another minute.

    Stir in the chili powder, cumin, paprika, oregano, cayenne, salt, and pepper. Cook 30 seconds to bloom the spices.

    Add the crushed tomatoes, diced tomatoes, beans, beef broth, and Worcestershire.

    Bring to a boil, reduce the heat to low, and simmer uncovered for 35–45 minutes, stirring occasionally. Longer and slower only makes it better.

    Taste and adjust the seasoning. Serve with shredded cheddar, sour cream, green onions, jalapeños, or cornbread.
