Salisbury Steak with Mushroom Gravy

Mix the patties only until they come together — overworking the beef is what makes them dense.

Ingredients

  • 1½ lb ground beef
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup finely diced onion
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 1 medium onion, sliced
  • 2 tbsp flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce (for the gravy)
  • ½ tsp thyme
  • Salt and black pepper, for the gravy

    Combine the beef, breadcrumbs, egg, diced onion, Worcestershire, Dijon, garlic powder, salt, and pepper. Mix just until combined and shape into four oval patties.

    Heat a large skillet over medium-high heat and brown the patties about 3–4 minutes per side, then remove.

    Melt the butter in the same skillet. Cook the mushrooms and sliced onions 6–8 minutes until browned.

    Sprinkle the flour over the vegetables and stir for 1 minute. Slowly pour in the beef broth while stirring, then add the Worcestershire and thyme.

    Return the patties to the skillet. Reduce the heat, cover, and simmer 12–15 minutes, until cooked through and the gravy has thickened.

    Serve with mashed potatoes, rice, or egg noodles, spooning the mushroom-onion gravy generously over the top.
