Savory Beef Tips with Mushroom Gravy

Savory Beef Tips with Mushroom Gravy

Low and slow is the only secret here. Sear the beef hard, then let it gently simmer in a mushroom gravy until it practically falls apart.

Ingredients

  • 2 lbs beef sirloin tips or chuck roast, cut into 1½-inch cubes
  • 1½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz cremini or baby bella mushrooms, sliced
  • 1 medium yellow onion, sliced
  • 4 garlic cloves, minced
  • 3 tbsp all-purpose flour
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp black pepper
  • ½ cup heavy cream, optional
  • 1 tbsp chopped fresh parsley

    Pat the beef completely dry with paper towels. Season with salt, pepper, garlic powder, onion powder, and smoked paprika.

    Heat olive oil in a large Dutch oven or deep skillet over medium-high heat. Once hot, add the beef in a single layer without overcrowding the pan. Sear for about 2–3 minutes per side until a dark brown crust develops, working in batches if necessary. Transfer the browned beef to a plate.

    Reduce heat to medium and add butter. Add mushrooms and onions and sauté for 6–8 minutes until the mushrooms are browned and the onions have softened. Add garlic and cook for another 30 seconds.

    Sprinkle flour over the mushrooms and onions. Stir continuously for 1–2 minutes to cook away the raw flour taste. Slowly pour in the beef broth while stirring and scraping up all the browned bits from the bottom of the pan. Add Worcestershire sauce, Dijon mustard, thyme, rosemary, and black pepper, then stir until combined.

    Return the beef and any accumulated juices to the pan. Bring the gravy to a gentle simmer, then cover, reduce heat to low, and cook for approximately 60–75 minutes, stirring occasionally, until the beef is fork-tender. Chuck may need a little longer than sirloin tips. If the gravy becomes too thick during cooking, add a splash of beef broth.

    Once the beef is tender, remove the lid and simmer for another 5–10 minutes if you'd like a thicker gravy. For an extra-rich version, reduce the heat to low and stir in ½ cup heavy cream. Cook for another 2 minutes without bringing it to a hard boil. Taste and adjust the salt and pepper.

    Spoon the beef tips and plenty of mushroom gravy over creamy mashed potatoes, buttered egg noodles, or white rice. Finish with chopped parsley.
